Stir for about 4 minutes, there should be no lumps. Remove from heat. Beat the eggs one at a time, stirring the mixture all the time. Divide the finished dough into 4 parts. Set aside one part. Cool the baking sheet, grease it with oil and sprinkle with flour. From the remaining dough, using a teaspoon, on a baking sheet, make strips 12 cm long. you should get 16-18 pieces. Bake in a well-heated oven for 15-20 minutes, then turn down the heat and finish baking. The oven cannot be opened during the process.
In the first part of the dough, put 100 grams of butter, a glass of sugar and vanilla. Beat the cream, add the grated chocolate at the end. Gently and very gently mix.
Cut the baked eclairs and fill them with cream.
From broken or unsuccessful eclairs, prepare crumbs and mix it with cocoa. Sprinkle the eclairs with crumbs and sprinkle with powdered sugar before serving.
